chicken parmesan burgers

This Sunday, aunt Penny and I went for a 14 mile run together and we really wanted to treat ourselves to a yummy dinner Sunday night.  However, after our long run, errands, unpacking for my stay, and church until 6:30, we wanted something that would be relatively quick and easy to make.  Chicken parmesan burgers seemed to fit the bill.  


What exactly is a chicken parmesan burger, you ask?  Well let’s see here.  We’ve got ground chicken (or turkey) mixed with some parmesan cheese, bread crumbs, basil, and marinara topped with mozzarella cheese sandwiched between two garlic bread buns.  Umm…yes, please!  
The original recipe comes from Bon Appetit magazine but I happened to find it on Circle B Kitchen.  I loved how every aspect of this burger is a part of chicken parmesan, from the parmesan cheese and bread crumbs in the burger, to the marinara sauce on top…and the buns being made into garlic buns was pure genius!  These burgers were a huge hit with the aunt and uncle and the only regret was that we didn’t make more of them.  

Penny’s quote of the recipe: “Oh my gosh those were soooo good.  I want more.”  30 minutes later: “Seriously, I want another burger.” 


Chicken Parmesan Burgers
adapted from Bon Appetit


1/2 cup finely grated Parmesan cheese
1/4 cup bread crumbs
4 tbsp fresh chopped basil
3/4 cup prepared marinara sauce
1 lb ground chicken (or ground turkey)
2 tbsp olive oil
1 tbsp finely chopped white onion
1/4 tsp salt
5 slices mozzarella cheese
Baby spinach
5 hamburger buns
Butter and garlic salt for buns


Directions:
Note: many ingredients are used in multiple parts of ingredients, so specific amounts in each part are listed below.  Above, the measurements needed for the entire recipe are listed.  


In bowl, combine all of bread crumbs and parmesan cheese.  


To prepare burgers:
In bowl, mix ground meat, 1/4 cup bread crumb-cheese mixture, 2 tbsp basil, 2 tbsp marinara sauce, 1/2 tbsp olive oil, 1 tbsp white onion, 1/4 tsp salt.  Shape into 1/2 inch-thick patties, about 5 patties.  Coat patties with crumbs.


Heat 1 1/2 tbsp olive oil in skillet over medium high heat.  Place patties in skillet until bottoms are crusty, 4-5 minutes.  Turn patties over and cook 4 minutes, top with cheese, then cover and cook one more minute.


For marinara sauce:
While preparing/cooking burgers, heat remaining marinara sauce (3/4 cup minus 2 tbsp) and 1 tbsp basil in small pot over low heat to warm.  (Or heat it in a bowl in the microwave.  No one will know.)


For buns:
Butter bottom and top of bun, sprinkle with garlic salt, bake in 400 degree oven for 5 minutes.


Assemble burgers with garlic bread buns, spinach, burgers, and top burgers with marinara sauce.
