Happy Friday! Better yet, happy Friday of a long weekend! We are heading up to the cabin for some relaxation which I am so looking forward to after traveling to Austin and a busy week of catching up on stuff around the house all week.

I was hoping to have a fun patriotic M&M cookie recipe for you today but my recipe just was not up to par.  They were good but not GOOD y’know?  So, cheesy cauliflower breadsticks, it is!

That’s not to say these cheesy breadsticks aren’t as good as cookies but in my world, chocolate trumps all. That said, Lars and I may have eaten almost this entire thing for dinner last night.  Followed by a few of those subpar cookies for me.  And even though my kid’s appetite is pretty impressive, he probably had the equivalent of only two of them.  So that leaves me one…two…five….okay who’s counting?  They were REALLY good and hard to stop munching on!

But let’s talk about what’s on everyone’s mind: cauliflower breadsticks?!  Yes, I know.  It sounds weird.  I’ve been a little weirded out by the whole cauliflower movement (cauliflower rice! cauliflower pizza crust! cauliflower pasta sauce!  mashed cauliflower!) that’s been going on for awhile now but after I eyed some pre-crumbled cauliflower at Target this week, I just had to try it.  As usual, I’m a year late to the food trend.

Now let’s talk about what these are not: cheesy, carb-filled {insert your favorite pizza shop} bread sticks.  But what these are? A super delicious and HEALTHY alternative!  I’ve always been a little skeptical of the low-carb movement (which was solidified by my horrible “2-ingredient” pancake disaster) but I have to say I am totally on board the cauliflower train.

These cheesy cauliflower breadsticks are not only low carb but they’re also gluten free AND dairy free since I used my favorite GO VEGGIE Mozzarella Shreds and Grated Parmesan, making it lower in calories, fat, and saturated fat than using normal cheese.  Not to mention, it’s just as delicious, too.  No seriously, it is!

While I made these breadsticks my main meal (hey, no judging!) they’d be delicious as an appetizer or side dish, too!

Cheesy Cauliflower Breadsticks

  • 3 3/4 cups cauliflower crumbles*
  • 3 eggs
  • 2 teaspoons dried Italian seasoning
  • 3 cloves garlic minced
  • 1/2 teaspoon salt
  • 2 cups GO VEGGIE Mozzarella shreds or shredded mozzarella cheese
  • 1/2 cup GO VEGGIE Parmesan or grated Parmesan cheese
  • Marinara sauce for dipping


  • *I bought my cauliflower already crumbled but you can also do this by buying a head of cauliflower, chopping into pieces and then pulsing it in a food processor until crumbles are formed.
  • Preheat oven to 425 degrees F.
  • Place cauliflower in a large microwave-safe bowl. Cover with plastic wrap.
  • Microwave for 10 minutes.
  • Let it cool until cooled off enough to handle it, then dump it onto a cheesecloth or a thin napkin. Gather the sides of the cloth and wring it out to remove excess liquid. Make sure you get as much liquid as possible out of the cauliflower.
  • In a bowl, combine cauliflower, eggs, Italian seasoning, garlic, salt, 1 cup of mozzarella cheese and Parmesan cheese. Stir to combine.
  • Line a baking sheet with foil or parchment paper and grease well with butter or cooking oil spray.
  • Spread cauliflower mixture out onto prepared baking sheet and form into a rectangle.
  • Bake in preheated oven for 25 minutes, until it is golden brown.
  • Top with remaining 1 cup of mozzarella cheese and bake an additional 5-8 minutes, until cheese is melted.
  • Cut into slices and serve with your favorite marinara sauce.
  • Enjoy!
