Happy Friday!!  And HAPPY ANNIVERSARY to my wonderful husband of five years!  Five years?!  How has it been five years already?

Wedding Day

It really is hard to believe that it’s been five years since we said “I Do” on an absolutely perfect September Minnesota day.  For those of you new around here, I’ll fill ya in on our magical day.

We were married at a vineyard in Marc’s hometown in Minnesota.  We had planned everything to be outside, from the ceremony to the cocktail hour to the dinner and reception.  We lucked out majorly with a sunny, 70 degree day in mid-September.  That day was meant to be ours.

Our wedding weekend was a collaboration of talents and contributions from all of our family and friends.  For the groom’s dinner, Marc’s parents and their friends made HOMEMADE wood burning oven pizzas in their backyard oven, along with amazing desserts.

Then we had two of our dear friends marry us, and another friend play the guitar and sing during our ceremony.  Of course, everyone who stood up by us during the wedding and every single person who showed up to celebrate with us were equally important.  And let’s not forget our parents who not only helped plan and coordinate everything, but helped with all of the DIY projects I dreamt up.  This included finding old windows at antique shops for the seating arrangement, putting ribbons on mason jars, cutting wood planks for our centerpieces, helping me find and perfect my wedding dress, and even making (yes, making!) our head table.  It was a day when I literally felt the love coming from every single direction.

Oh and let’s not forget the epic dance party that occurred.  It was the perfect ending to our special day.

While every single day isn’t quite as magical as September 15, 2012 (that day is hard to beat!), I can’t imagine doing life without Marc by my side.  There’s no one else in this world that I’d rather have by my side to adventure with, travel with, parent with, and just spend my time with.  I have to say – I am one lucky girl and I know it!

Candy Corn Rolo Pretzel Bites

These little Candy Corn Rolo Pretzel Bites are such a fun fall treat…and EASY!  I had the idea for these when I was looking at these Rolo Pretzel Turtles that we made last year during our holiday baking while simultaneously thinking about my fave fall combination of peanuts, candy corn, and M&M’s.

These Candy Corn Rolo Pretzel Bites are basically a love child of those two.  And actually, I had originally not even planned on putting the chopped peanuts on top.  But when I took a bite of the pretzel + Rolo + candy corn combination, I knew it was missing something.  I quickly chopped up a handful of pretzels and sprinkled them on top, and it was perfection.

Ingredients

  • Grid-Shaped Pretzels
  • Rolos unwrapped
  • Candy Corn
  • Chopped peanuts

Instructions

  • Preheat oven to 300 degrees F.
  • Place pretzels on a parchment paper lined baking sheet.
  • Top each pretzel with one Rolo. **The number of pretzel bites that you end up with will likely depend on the Rolos. I just put a bunch of pretzels out on the baking sheet and once my Rolo bag was gone, removed the ones that didn't have Rolos on them.
  • Bake in preheated oven for 5-7 minutes.
  • Once out of the oven, immediately press a candy corn onto each Rolo, and top with crushed peanuts.
  • Let cool completely.
  • I put mine in the refrigerator to set up.
  • Enjoy!
