Grilled Cheddar Sausage and Pepper Skillet is a super simple and flavorful weeknight dinner made on the grill in one skillet!
Last week on Instagram, I did a few polls on my stories to see what kind of spring and summer recipes my IG followers want. Turns out - everyone wants some grilling recipes! WHICH, by the way, I'm super stoked about because 1) I absolutely love grilling (Blue Cheese Burgers - whaaaat!)and 2) I have some super fun grilling recipes brewing in my head for ya! Think fun like Grilled Pineapple Margaritas.
First up - this Grilled Cheddar Sausage and Pepper Skillet. It really doesn't get any easier than this. You chop a bunch of veggies, season them with olive oil, smoked paprika, garlic, s&p. Then ya grill 'em up in your grilling basket, add the cheddar sausage for the last 10ish minutes and there ya have it. Dinner. Is. Served. BOOM!
Easy! This recipe is so easy to toss together.
Meal Prep. This recipe can easily be prepped ahead of time to throw on the grill when you're ready to cook. Simply chop the veggies and sausage, and combine the vegetables with the oil and spice mixture. Store in the refrigerator for up to 12 hours in an airtight container until you're ready to cook.
Crowd pleaser. This recipe is loved by everyone that has it! The combination of cheddar sausage and veggies is delicious and it's a great way to enjoy vegetables.
Cheddar Sausage - I love the richness that the gooey cheese adds to this dish! Certainly use any type of sausage you prefer (or check out my Grilled Hawaiian Sausage!), but this is really delicious with cheddar sausage. Also, I like to use sausage from a butcher as opposed to a big brand at the grocery store.
Vegetables - my go-tos are zucchini, bell peppers and onions. These are all delicious summer veggies that are so great on the grill!
Spices - I use a simple combination of smoked paprika and garlic powder, along with salt!
This recipe is almost so easy that I contemplated even sharing it. BUT! There's definitely some magic in those paprika and garlic seasoned veggies so it shall be shared!
Refer to the recipe card for the complete ingredients with specific measurements.
Step 1. Chop the vegetables. I like to cut the zucchini into circles if they are smaller zucchini, or half circles if it's a larger zucchini. for the peppers, I do strips and I slice the red onion into half circles.
Step 2. Chop the cheddar sausage into large chunks
Step 3. Add the veggies to a large bowl.
Step 4. Drizzle with olive oil and toss with spices.
Step 5. Add the veggies to a grill pan and grill over medium-high heat for 15 minutes.
Step 6. Add the cheddar sausage and grill another 10 minutes, stirring every few minutes.
Since the veggies take about 20-25 minutes to grill, I waited until the last minute to add the cheddar sausage. The sausage is already cooked so it really just needs to be warmed up and I also didn't want all of the cheese oozing out. 10 minutes was perfect for some pieces to get a little crispy and all of them to be hot.
Switch up the sausage. You can definitely use a different type of sausage if you prefer or have something different on hand. It would be delicious with chicken sausage, kielbasa, or any kind of smoked sausage. Just make sure it is pre-cooked.
Switch up the veggies. While I love the zucchini, peppers, and onions, many other vegetables could be used including mushrooms, yellow summer squash, green bell peppers, and asparagus. If you use something like diced sweet potatoes, you may need to adjust the cooking time.
Kick up the spice. If you want things on the spicier side, add ¼-1/2 teaspoon of cayenne pepper to the spice mixture!
This is definitely going on our summer rotation - all of us loved this one skillet grilled dinner!
In this recipe, the sausage is pre-cooked so you just need to warm it up. I like to cook it around 10-15 minutes.
A grill pan is recommended for this recipe, but if you don't have one, you can make one out of aluminum foil. Simply form a large rectangle of foil (I would do two layers) and bend up the sides to make the edges of the "pan." Then cook the veggies in this aluminum foil pan. They won't get quite as crispy but they will still be delicious.

This is delicious! However, our BBQ just died. Could you cook this in the oven instead? What temperature and for how long?

I think that would definitely work. I would start at 425 degrees F for 15-20 minutes, until the peppers are cooked 🙂 Enjoy!
